Tomatoes in Panko crumbs



My favorite vegetable is tomato and  one of my favorite, simple veggie dish is tomatoes in Panco crumbs. Instead the typical bread crumbs coating I use Panko crumbs.

Instruction:

Cut tomatoes into 1 cm thick slices. Season with salt and pepper.
Dip tomatoe slices in flour, then eggs, then Panco crumbs.
Heat olive oil in a skillet on medium heat an fry tomatoes about 2 minutes per side. 
Once the tomatoes are golden, remove the pan from the heat. Threw some more salt on top of tomatoes.
Serve with mayonnaise or cream and capers.
